🌽 Side dishes Citrus & Pomegranate with Hibiscus Honey Submitted by Chef Erik Niel, owner of Easy Bistro + Main Street Meats

Ingredients for the citrus (As many varieties of citrus as you can find) • 10 assorted citrus -peeled and sliced into rounds • 2 pomegranate – seeds only • 1/2 cup mint leaves – torn • 1 cinnamon stick • 1 cup Hibiscus Honey (see below)
Instructions for assembly of citrus 1. On a serving platter, drizzle the hibiscus honey on the plate 2. Arrange the sliced citrus on top of the honey 3. Top with the pomegranate seeds 4. Grate a small amount of cinnamon over the citrus 5. Drizzle a little more hibiscus honey 6. Garnish with torn mint
Ingredients for the hibiscus honey • 1 cup Red wine Vinegar • 1 cup honey • 2 dried hibiscus flowers
Instructions for the hibiscus honey 1. Combine vinegar and hibiscus in a small stockpot, bring to a simmer 2. Add the honey while stirring. Simmer till the honey will coat the back of a spoon. 3. Let stand. Remove the Hibiscus flowers before use.

Wells also has a show called “New Soul Kitchen” that airs every Sunday on Cleo TV. He also a contributor on Oprah Winfrey Network’s new food show “Food Fantasies” that airs every Saturday at 1 p.m.
Ingredients • 5 strips of sliced turkey bacon • 2 smoked turkey legs meat pulled off the bone • 2 medium-size sweet onions, finely chopped • 6 garlic cloves, finely chopped • 3 (32-oz.) containers chicken broth • 3 (1-lb.) packages fresh collard greens, washed and trimmed • 1/3 cup apple cider vinegar • 1/3 cup sugar • 3 tbsp granulated garlic • 3 tbsp granulated onion powder • 1 tbsp black pepper • 2 tbsp salt • 1 tbsp of red pepper flakes • 2 tbsp of olive oil

Announced ○State + business officials recently announced that insurance broker agency Reliance Partners, LLC will invest $1.3 million to expand its Chattanooga headquarters. Over the next five years, this expansion will create over 100 new jobs in Hamilton County + new positions focused on day-to-day operations. (Chattanooga Times Free Press)
Biz ○Ever wanted to give somebody a song written just for them, but don’t have the musical ability? Check out Songlorious, a new, locally-based business that creates unique songs or jingles for customers — it was started by two local musicians while they were living in Brooklyn. Listen ○ Calling all podcast fans — there’s a new local podcast coming out soon that will feature 10-15 minute episodes about how our city government works and how local citizens can get involved. The first episode of the podcast, called Chattanooga Civics, will be released on Nov. 30. You can listen to the podcast introduction now via this link. 🎧
Civic ○ The Tennessee Valley Authority Board of Directors approved a new commercial rate structure to expand electric vehicle charging docks throughout the region. TVA president and CEO Jeff Lyash said that TVA is an industry leader in low cost + clean energy and plans to be an industry leader in the electric vehicle realm. Since 2005, TVA has reduced carbon emissions by 60%, with a 70% goal expected for 2030. 🚗 ○ Federal authorities are seeking comments on a proposal to list a local species of fish, the sickle darter, as a threatened species. The sickle darter is only found in six locations across the world, one being the Sequatchie River in east Tennessee. If approved, the proposal would call for restoration of the threatened habitats. Coronavirus ○ The Hamilton County Health Department recently announced a possible COVID-19 exposure at the Chattanooga Cigar Club (1518 Market St.). According to the health department, individuals attended the cigar club during their infectious period between Nov. 7 at 10:30 p.m. and Nov. 8 at 2 a.m. If you were at the Chattanooga Cigar Club during this time, it is recommended that you get tested as soon as possible.
Cause ○On November 21 from 11 a.m. – 1 p.m., the Allstate office in East Brainerd will host a food drive to benefit the Brainerd Community Food Pantry. A table will be set in front to drop off non-perishable food items while maintaining social distance policies. Donations will be accepted in the office until Nov. 24 at noon, and dropped off at the Brainerd United Methodist Church in time for Thanksgiving. 🥫
Edu ○ One group of seniors from STEM School Chattanooga was the only team of high school students competing against college teams in the Gig City Innovation Challenge. The team — made up of students Lily Rosenow, Vistsael Madrigal, Alec Deckman, Lauren Bennett, Holden Gersch, and Grace Tang — placed second in the competition by pitching an idea featuring five major solutions targeting Chattanooga’s electrification. TheBuy ○ Over Thanksgiving weekend, Collegedale will have its Christmas Market at the Collegedale Commons.
